Cheap and cheerful meat-free meal to spice up your evening.
Packed full of fresh veggies, this is a quick 15 minute mid-week meal. Fiery hot and full of flavour.
Combine the onion, garlic, chilli, red pepper, black eyed peas and passata in a bowl. Add the salt, pepper and cayenne pepper to the mix. In a pan on a high heat fry off the mix for 3 minutes until slightly softened and set aside. In another pan, add a knob of butter (or coconut oil if you prefer) and melt on a low heat. Place one tortilla into the butter. Add a heap tablespoon to one half of the tortilla. Sprinkle some coriander and cheese onto the mix. Fold the tortilla over the mix into a half moon shape and then flip over for a couple minutes on the other side.
Serve with coriander, chillies and a generous dollop of sour cream.
