Preheat oven: 180 degrees
Peel the sweet potatoes and slice into thin circles. Toss in the salt, pepper and oil then bake in the oven for 10 minutes. Flip them over then bake for another 10-15 minutes. While the nachos are baking, chop the tomatoes, onion and parsley. Add to a bowl with the sweetcorn and kidney beans and mix together. Once baked, remove the sweet potatoes from the oven and top with the salsa mix. Sprinkle with some extra parsley and chillies and a few dollops of sour cream.
