Melt the chocolate and coconut oil in a bowl. Pour one tablespoon of the melted chocolate into the muffin cases and give it a tap to ensure you get an even spread. Freeze for 5 minutes. Mix together the peanut butter and icing sugar. Add the peanut butter mixture on top of the frozen chocolate. Freeze for 20 minutes. Add the remaining chocolate on top of the peanut butter layer and freeze for another 10 minutes.
