A wicked new cookbook for you all.
Even though I've (nearly) got my health back on track, I'm still looking for ways to improve my diet and wellbeing. The lovely guys at DK sent me this wonderful book, Power Pulses by Tami Hardeman. This cookbook is all about, yes you guessed it the power of pulses - lentils, chickpeas, beans the lot! Rich in protein and essential minerals, I'm definitely guilty of not eating enough pulses. There are 150 recipes which all sound delicious so it was a toss up between the Spiced Lentil Tacos and the Shakshuka recipe which is what I've opted for today. I switched this recipe up just a tad, as I wanted to bake the tomatoes instead of fry them but here's the recipe from the book:
Warm the oil in a frying pan then add the onion and peppers. Cook until soft. Add the garlic and chilli and cook for a further 2 mins. Add the tomatoes, tomato purée, cumin, paprika and vinegar. Cook for 5 minutes then add the lentils and cook for another 20-25 minutes until tender. Add the salt and pepper to taste. Create 4 wells in the mixture and crack the eggs into each well. Cover the frying pan and cook for 5-8 minutes until the eggs are just set. Serve with a thick slice of toast to dunk into the mix.
