So much alliteration.
I can't take the credit for this one. My wonderful old housemate Emma made a similar recipe for us a few weeks back. It was ridiculously simple and delicious, so I had to have a go myself.
Preheat Oven: 200 degrees
Roll out your puff pastry and cook for 5 minutes to ensure the middle will be cooked through.
Mix the passata, truffle oil, chilli, garlic and spices then spread over the partially cooked pastry.
Add the mozzarella and cheddar cheese.
Cook for 15 - 20 minutes, until the pastry has puffed up and the cheeses have melted.
On reflection, I should have cooked it a wee bit longer before adding the toppings so the middle puffed up more. But still, a great substitution if you're not in the mood for stodgy pizza dough.
You could try adding pesto, so you have a pesto puff pastry pizza - even more alliteration!
