Only a mini post today, I was enjoying the sunshine far too much to properly take snaps. Mum and I had a girls lunch, catering for a few guests with specific dietary requirements - somewhat of a culinary challenge! No meat, gluten, caffeine or citrus...help! We rattled our brains and decided to explore Yotam Ottolenghi's cookbook Jerusalem, which was an absolute lifesaver. I pinched two recipes from the cookbook: Baby Spinach Salad with Dates & Almonds Roasted Butternut Squash, Red Onions with Tahini & Za'atar You can find the recipes here: http://www.nytimes.com/recipes/1014942/baby-spinach-salad-with-dates-and-almonds.html http://www.theguardian.com/lifeandstyle/2011/dec/16/roasted-squash-stuffed-quince-recipes Roasted butternut squash, red onions, toasted pine nuts, parsley and za'atar. With a side of the garlicy tahini dressing. Baby spinach salad, dates, almonds, sumac, red onions, white wine vinegar, toasted gluten-free pita breads and olive oil. To wash it all down, fresh mint iced water. And copious amounts of prosecco... I'm off to Cornwall now to eat pastries and ice cream! I'll update you all when I return. Fingers crossed for sunshine.
