Merry Christmas! I hope you've all had a smashing day and your bellies are wonderfully full. Here's a little recipe for some Asian-inspired leftover turkey pancakes. A great way to use up all the leftover bits and bobs. Also great to get some fresh fruit and veg in your system..
For the turkey:
Begin by shredding the turkey then cooking on a medium heat in a frying pan with the sesame oil. Add the fivespice, honey, soy, salt and pepper. Mix until the turkey is slightly crisp and golden brown. Slice the carrots, cucumber and spring onion into small matchsticks. Serve with leftover cranberry sauce, a scattering of pomegranates and a squeeze of lemon.
