The perfect way to use up your Turkey and all the tasty trimmings.
After the manic Christmas rush, there's nothing worse than the fear of having to do it all over again on Boxing Day. Why not make one these simple sandwiches with a fun holiday twist?
When we had our student Christmas dinner we used the leftover Turkey for a curry, but the options are endless. You could make a pie, burritos, a casserole, turkey con chilli, turkey salad, coronation turkey, soup or a Turkey bánh mì which I'm desperate to make in the new year so keep your eyes peeled folks. With these nifty little sandwiches they're sure to fill any rumbling stomach with delight. Plus, it's a great way to use up all the surplus food - no wastage in this household!
Obviously you can add anything else you like.
Shred the leftover turkey and stuffing and leave to one side.
I toasted the bread just to make sure it would all hold together nicely.
Slather some mayonnaise onto two pieces.
Then pile the turkey as high as possible.
Add a layer of stuffing and a layer of cranberry sauce.
Slice up the camembert and place on top of your delicious masterpiece. Or, if you're feeling extra cheeky, you could bake the camembert and spread the oozing cheese onto the sandwich.
Spread some mustard onto the other slices of bread and place on top.
Grab or pickle or two and tuck in. You deserve it.
