A poor student Christmas...
Yaaaaaaaaaaay! Christmas time - aka feeling uncomfortably stuffed while casually trying to undo my jeans on the sly, without anyone noticing.
Preheat Oven: 180 degrees
Veggies (enough for 6 people)
Down to business, twerky time.
Our 6.6kg turkey took a total of 4 hours 40 mins to cook + an additional 30 mins to stand as we were dying to get stuck in. Begin by, weaving the bacon and placing on top of the turkey. (You can check out another one of my bacon weave's here). Cut the orange and lemon in half. Stick the lemon in the turkey cavity, and one half of the orange in the turkey neck. Shove the shallots up there too. Squeeze the orange half over the whole turkey and place in the tray.
Cover with foil and leave for 3 hours 40 minutes.
Then take the foil off, so the bacon can crisp up for the last hour. Keep regularly basting.
All about that baste, 'bout that baste.
An hour before serving, peel and chop up all your desired veggies and leave to one side.
Take the potatoes and parsnips off the boil and into a tray filled with the goose fat, shallots and garlic cloves.
Cook the piggies and stuffing 30mins before serving.
For the gravy, pour the juices from the meat into a pan and simmer. Add the flour and quickly stir in to thicken. Add the bay leaves, wine, season and sieve.
Boil the sprouts for 5 minutes and fry in a pan with bacon. Cook all your veggies 15 minutes before ready to serve.
