It was my oldest pal's 21st birthday, so I attempted to bake a fun surprise-on-the-inside cake!
It's so fun and cute and yummy and chocolatey and colourful!
One of my best friend's Josephine recently turned 21 and as she lives in Denmark (I know, so selfish!) and I hadn't seen her for MONTHS, I thought I should make her something special.
Preheat Oven: 180 degrees
Chocolate Butter Cream:
Cream the butter and caster sugar together in a bowl and add the vanilla extract.
Add the beaten eggs and pinch of salt.
Then slowly add the flour and sprinkles. Mix thoroughly to ensure the colours are evenly distributed.
Divide the mix into three baking tins and bake for 20 minutes until a knife comes clean out of the middle.
While the cakes are baking, you can start on the chocolate butter cream. Melt the chocolate. Mix the butter and icing sugar together in a bowl. Then add the cocoa powder and mix in the melted milk chocolate.
Leave your cakes to cool then flip one of the cakes over. Spread the jam generously over the top of cake number 1.
Take a cookie cutter or small bowl and cut a circle in the middle of cake number 2. You should be left with a hollow hole in the middle of cake number 2.
Spread the jam over the top of cake number 2. Place this cake on top of cake number 1 and fill the hole with the smarties.
Place cake number 3 on top making sure all three cakes are aligned. Now spread your butter cream all over the top and the sides.
In a sandwich bag, bash the flakes into small pieces and scatter over the top of the cake. I used some leftover sprinkles to decorate.
Now time for the reveal...
I spy some smarties!

The smarties came tumbling out of the centre ready to surprise the birthday girl.
