Keep your greens up this January.
Happy new year everyone! Hands up who's got a cold? Kick start those January resolutions with a great, big, generous green buddha bowl. These are great for meal prepping for the week or for using up veg.
To make this particular buddha bowl start by boiling the pearl barley mix and leaving to simmer for 20-25 minutes. While that's cooking, steam the brocolli florets for 4-5 minutes. Wash the spinach and rocket leaves then serve with the pearl barley, sliced avocado, broccoli and sliced radishes. Squeeze the lime juice all over the salad then sprinkle the salt, pepper and pumpkin seeds on top. Serve with some mint leaves for a fresh finish.
