A hearty dish to cater for all.
Try this dairy-free recipe using Cirio tomatoes for an authentic Italian weeknight meal. I'm still missing cheese and I'm yet to try Nutritional Yeast as an alternative but this Cheese-less option will hit the spot.
Preheat Oven: 200 degrees
Fake Béchamel sauce:
To make the dairy-free white sauce, melt the coconut oil in a pan and add the flour to create a paste. In a separate pan sweat the onions and garlic then add the milk, water, stock cube and pepper. Bring to the boil then set aside and slowly add to the paste in the other pan on a medium heat. Continuously stir the sauce until it thickens. Once you have your desired consistency leave to one side and crack on with the meat-free sauce. Fry the onions, garlic and Cirio tomatoes in a pan on a high heat. Add the Quorn mince, water, stock cube, lemon juice, Worcestershire sauce, soy, basil, salt and pepper. Cook for 5-8 minutes then remove from the heat.
To assemble the lasagne, spoon a layer of the meat-free sauce onto the base of your oven dish. Add two lasagne sheets on top, then a layer of the white sauce then a layer of the meat-free sauce and repeat. Finish with a layer of the white sauce and an extra crack of black pepper.
