Maybe better than normal cookies?
I've always been a big cookie fan which you can see here, here and here. However I hadn't tried making my own dairy-free cookies, and oh sweet jesus these things are better than normal cookies.
Preheat Oven: 180 degrees
In a bowl combine the dry ingredients - flour, baking powder and salt then set aside. In a separate bowl cream together the butter, coconut oil, dark sugar, granulated sugar, vanilla extract and egg. Once it's a smooth consistency, slowly add in the dry mix. If you feel the mix is too dry add a dash of water. Chuck in the chocolate chips and give it a good stir. Chill the cookie dough in the fridge for 10 minutes. Line a baking tray with greaseproof paper and roll small-sized patties (burgers always on the mind) between your palms. Bake for 6-7 minutes.
