Whipped up a checkerboard cake for my gorgeous friend's Reggae themed 21st Birthday.
Now now don't panic, this cake is honestly really simple to make and is a real crowd pleaser.
Preheat Oven: 160 degrees
450g self raising flour
150g plain flour
590g caster sugar
Whisk the sugar, butter and eggs in a bowl and mix until creamy.
Next slowly add the flour (self-raising and plain) and combine until a smooth texture is achieved.
Then divide the mix evenly into two bowls. You will be making four layers, so try and make the mix as equal as possible.
Colour the separate mixes with any dyes you like - you can always use Cocoa powder for half the mix to distinguish the layers if you don't want to use food dyes.
I used Dr Oetker gel food dyes as I think they are the only dyes that really give you a popping colour.
Colour 1: Yellow
Colour 2: Green
Divide each colour into two baking tins - 2 yellow, 2 green.
Bake for 25-30 minutes, stick your knife in to check it comes out clean.
Once all four are done, time for construction!
Use your cake cutters, or any old cake tins/bowls to cut the shapes out of all four cakes.
All your pieces should be cut and now you want to assemble the layers alternating the colours.

Phew, now the assembling is finished, time to make your construction beautiful. I have to admit I dropped one of the layers *facepalm* so I only used two in the end.
Generous helping of butter cream of course.
Et voila! Man, that thing was heavy.
Now time to partyyy!
Starting the night off with some OUTRAGEOUS hoppers - a rice flour batter with a fried egg accompanied with an array of Sri Lankan curries, spoilt for choice! Definitely going to try making some hoppers, need to get my mitts on a mini wok.

I'm pretty chuffed with the end result, always room for improvement e.g. don't drop a layer on the floor.
I think yellow and blue may have worked better to make the squares really stand out.
Regardless the cake was demolished. Not sure how though after all that divine curry...
