Here's my adaption of a soy ramen recipe from the Bone Daddies cookbook I got for Christmas. I've simplified the recipe quite a bit using ingredients anyone can easily grab from the supermarket. This is a great week day meal for something slightly indulgent that only takes 20 minutes to make.
Begin by boiling the egg in a pan for 8 minutes then remove and leave in a bowl of cold water. In a separate pan boil the water then add in the miso paste, bay leaves and soy sauce. Brown the shallots and garlic in a frying pan then add to the miso stock along with the broccoli florets. Season the steak with the salt and pepper then cook to your taste on a high heat in the frying pan. I like my steak quite pink but feel free to cook yours however you'd like. Remove the steak from the pan and leave to rest for 5-10 minutes. Cook the egg noodles to the pack instructions and add to the miso stock. Peel the egg and slice in half. Then slice your steak into thin slithers and serve with a sprinkle of chopped chilli.
