Killer, creamy, cheesy recipe. Mac n Cheese is the ultimate comfort food, but chuck in some homemade pesto and bacon and you've got yourself a Michelin star meal! Well not Michelin, but a great meal to tuck into with amigos. Preheat Oven: 160 degrees
Cook the pasta according to the instructions on the packaging. I cooked mine for 12 minutes. Drain the pasta and leave to one side. In a pan on a medium heat, melt the butter and continuously stir in the flour for 2 or 3 minutes. Gradually add in the milk, cream, salt and pepper. Then add the grated cheese but leave a handful for the top. Mix the sauce with the pasta in a bowl. Cook the bacon. Once cooked, chop up into small pieces. Stir the pesto through the pasta. Start to layer up the pasta into a deep baking tray. Shred small pieces of the mozzarella and scatter on top of the layer. Add the bacon bits, then repeat until you've used all the ingredients. Once all layered, sprinkle the leftover cheddar cheese and breadcrumbs on top. Bake for 10 minutes until golden brown and uber gooey. Served with my green bean recipe which you can find here.
Suuuuuuuuuuuuuuuper cheesy, with a cracking bite from the bacon and crunch from the crispy top.
