What's a great healthy alternative to chips? Skinny courgette fries! This recipe is so easy to make and perfect for anyone who's trying to be healthier but doesn't want to miss out on great tasting food. Preheat Oven: 230 degrees For the fries:
For the Blue Cheese sauce:
Cut off the ends of your courgettes and chop into thin strips. I found the thinnest strips seemed to have the best crunch. Then in a bowl, mix a handful of plain flour, paprika and breadcrumbs together. Then chuck some olive oil over your courgette fries and dip them into your flour mix. You can always coat your courgettes with egg first. Make sure your fries are lovingly coated all over. Place your fries evenly onto a baking tray, and drizzle with oil. Then generously sprinkle the parmesan cheese all over the fries. Roast these little guys for about 15-20 minutes. While the fries are in the oven, start on your blue cheese sauce. In a bowl, mix your sour cream with the lemon juice. Then add a couple of spoonfuls of blue cheese, taste it, and maybe add more depending on how strong you'd like your sauce. Thoroughly mix your sauce together until creamy. Finish with a sprinkle of chilli powder and voila! Medium rare steak, blue cheese dipping sauce and your delicious, super healthy courgette fries! Perfectly indulgent night in.
